Einstein's open for summer
The Einstein's bagel shop in The Sam Rayburn Memorial Student Center opened its doors last week for a summer of business.
Retail Manager Danny Shumway said having the store open over the summer is something he has wanted since it opened.
"I have always wanted to see if it would work," he said.
An area where Shumway said he hopes to improve business is with entities outside the school.
"Over the summer there are not a lot of folks on campus," he said. "The [Commerce] hospital already comes over and gets bagels and we are hoping to interest other businesses too."
Shumway said the university has been very supportive in his efforts to improve Einstein's business. He said businesses outside the school are concerned due to a lack of open parking near the SRSC, but Shumway said he is hoping public parking will be set up at the south end of the SRSC.
The first day's business was good according to Shumway.
"We had a good mixture of people," he said. "There were a lot of professors, but some students and student workers also came in."
Shumway said the restaurant will have its full menu during the summer and will be adding new selections such as an orange mango bagel.
"It is really, really good," he said.
Shumway said he will be getting coupons to give to the store's patrons with in the next week.
Einstein's will be open 9 a.m. to 2 p.m. Monday through Thursday.
